Instructions
- Preheat oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet. Roast for 60 minutes until fork-tender.
- While beets roast, wash and dry the mixed greens.
- Toast walnuts in a skillet over medium heat for about 5-7 minutes until golden brown.
- In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
- Once beets are roasted and cooled slightly, peel and slice them into wedges or cubes.
- In a large bowl, combine mixed greens, sliced beets, toasted walnuts, and crumbled feta cheese. Drizzle with dressing just before serving.
