Description

Ingredients

  • 4 medium-sized fresh beets
  • 1 cup mixed greens (arugula, spinach, or kale)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup toasted walnuts
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap each beet in aluminum foil and place on a baking sheet. Roast for 60 minutes until fork-tender.
  2. While beets roast, wash and dry the mixed greens.
  3. Toast walnuts in a skillet over medium heat for about 5-7 minutes until golden brown.
  4. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  5. Once beets are roasted and cooled slightly, peel and slice them into wedges or cubes.
  6. In a large bowl, combine mixed greens, sliced beets, toasted walnuts, and crumbled feta cheese. Drizzle with dressing just before serving.
