- 1 teaspoon baking powder
- 1 teaspoon dried parsley
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup cold vegan butter
- 1/3 cup soy milk
- 2 tablespoons olive oil
- 1/2 large onion (finely diced)
- 5 cloves garlic (minced)
- 2 medium carrots (peeled & diced)
- 2 stalks celery (diced)
- 4 ounces mushrooms (thinly sliced)
- 1 tablespoon tomato paste
- 1 tablespoon vegan worcestershire sauce
- 1 teaspoon dried parsley
- Salt & pepper to taste
- 15 ounce can cannellini beans (strained & rinsed)
- 2.5 cups vegetable broth
- 1–2 teaspoons fresh thyme (leaves only)
Instructions
- In a mixing bowl, combine 1 cup all-purpose flour, 1 teaspoon baking powder, 1 teaspoon dried parsley, 1/4 teaspoon salt, and 1/4 teaspoon ground black pepper.
- Add in 1/4 cup cubed cold vegan butter and mix until crumbly.
- Slowly pour in 1/3 cup soy milk while stirring until just combined. Set aside.
- In a pot or Dutch oven, heat olive oil over medium heat.
- Add finely diced onion and cook until translucent.
- Stir in minced garlic and sauté until fragrant.
- Add diced carrots and celery; cook until softened.
- Mix in sliced mushrooms, tomato paste, vegan worcestershire sauce, dried parsley, salt, and pepper.
- Add the cannellini beans to the pot.
- Pour in 2.5 cups of vegetable broth along with fresh thyme leaves.
- Bring the mixture to a simmer.
- Drop spoonfuls of dumpling dough onto the surface of the stew.
- Cover with a lid and let cook for about 15-20 minutes until dumplings are fluffy.
