  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup cold vegan butter
  • 1/3 cup soy milk
  • 2 tablespoons olive oil
  • 1/2 large onion (finely diced)
  • 5 cloves garlic (minced)
  • 2 medium carrots (peeled & diced)
  • 2 stalks celery (diced)
  • 4 ounces mushrooms (thinly sliced)
  • 1 tablespoon tomato paste
  • 1 tablespoon vegan worcestershire sauce
  • 1 teaspoon dried parsley
  • Salt & pepper to taste
  • 15 ounce can cannellini beans (strained & rinsed)
  • 2.5 cups vegetable broth
  • 12 teaspoons fresh thyme (leaves only)

Instructions

  1. In a mixing bowl, combine 1 cup all-purpose flour, 1 teaspoon baking powder, 1 teaspoon dried parsley, 1/4 teaspoon salt, and 1/4 teaspoon ground black pepper.
  2. Add in 1/4 cup cubed cold vegan butter and mix until crumbly.
  3. Slowly pour in 1/3 cup soy milk while stirring until just combined. Set aside.
  4. In a pot or Dutch oven, heat olive oil over medium heat.
  5. Add finely diced onion and cook until translucent.
  6. Stir in minced garlic and sauté until fragrant.
  7. Add diced carrots and celery; cook until softened.
  8. Mix in sliced mushrooms, tomato paste, vegan worcestershire sauce, dried parsley, salt, and pepper.
  9. Add the cannellini beans to the pot.
  10. Pour in 2.5 cups of vegetable broth along with fresh thyme leaves.
  11. Bring the mixture to a simmer.
  12. Drop spoonfuls of dumpling dough onto the surface of the stew.
  13. Cover with a lid and let cook for about 15-20 minutes until dumplings are fluffy.
