  • 1/4 cup oat flour
  • 1/4 tsp salt
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, oat flour, salt, melted coconut oil, and maple syrup until combined. Press into an 8×8 baking dish as the base.
  3. For the berry filling, heat mixed berries with maple syrup and water until softened. Mash and thicken with cornstarch, then cool.
  4. Combine oat flour, oats, almond flour, melted coconut oil, maple syrup, vanilla extract, and salt to create the crumble topping.
  5. Layer the berry mixture over the base, top with crumble mix, and bake for 25 minutes until golden brown.
  6. Allow cooling before slicing and serving.
