  • 1/4 cup unsalted butter, melted
  • 3 1/2 to 4 cups all-purpose flour
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting)

Instructions

  1. In a large bowl, combine warm milk, yeast, and a pinch of sugar. Let stand for 5-10 minutes until foamy.
  2. Whisk in remaining granulated sugar, egg, vanilla extract, salt, and melted butter into the yeast mixture.
  3. Gradually add flour until a soft dough forms. Knead on a floured surface for 5-7 minutes until smooth.
  4. Place dough in a greased bowl; cover and let rise in a warm place for 1 to 1.5 hours until doubled in size.
  5. Punch down the dough and roll it out to about 1/4 inch thickness. Cut into squares or rectangles.
  6. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry beignets for 1-2 minutes per side until golden brown.
  7. Remove from oil with a slotted spoon; drain on paper towels and dust generously with powdered sugar before serving warm.
