  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs, sugar, and melted butter; press into cupcake liners.
  3. Beat together cream cheese and sugar until smooth; add eggs one at a time. Mix in sour cream, heavy cream, vanilla bean seeds, and extract until well combined.
  4. Fill liners with cheesecake batter and bake for 20–25 minutes until set but slightly jiggly. Cool to room temperature.
  5. Refrigerate for at least 2 hours to chill.
