  • 1/2 cup cake flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup cold butter (cut into cubes)
  • 1 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large cold egg
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate (chopped)
  • 1 1/8 cups semi-sweet chocolate chips
  • Optional: Coarsely chopped walnuts

Instructions

  1. Preheat the oven to 400°F and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer, cream together cold butter cubes, brown sugar, and granulated sugar until smooth. Add the cold egg and vanilla extract; mix well.
  4. Gradually add the dry ingredient mixture to the wet ingredients until just combined. Fold in chopped chocolate, chocolate chips, and walnuts if desired.
  5. Scoop dough into balls (about 1/2 cup each) and place on prepared cookie sheets.
  6. Bake for 12 to 13 minutes until edges are golden brown but centers are still soft.
  7. Allow to cool slightly before transferring to a wire rack.
