  • 9 no-boil lasagna noodles
  • 2 cups fresh baby spinach
  • 1 cup cremini mushrooms, sliced
  • 15 oz whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil. Sauté minced garlic until fragrant, then add sliced mushrooms. Cook until soft, about 5 minutes. Stir in spinach until wilted.
  3. In a bowl, combine ricotta cheese with half of the Parmesan cheese, dried herbs, salt, and pepper; mix well.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish. Layer three lasagna noodles, half of the ricotta mixture, sautéed vegetables, and sprinkle with mozzarella.
  5. Repeat layers with remaining ingredients: noodles, ricotta mixture, vegetables, marinara sauce, and top with mozzarella.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly.
