Description

Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch pieces
  • 2 large carrots, sliced thickly
  • 3 medium Yukon Gold potatoes, diced
  • 1 medium zucchini, sliced
  • 2 onions, quartered
  • 4 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped (for garnish)
  • 8 cups beef broth
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the vegetables and cutting the beef.
  2. In a large pot over medium-high heat, add oil and sear the beef until browned on all sides.
  3. Add onions and garlic to the pot; sauté until fragrant.
  4. Pour in the beef broth and enough water to cover the ingredients by about an inch. Bring to a gentle boil then reduce heat to simmer.
  5. After one hour, add carrots, potatoes, zucchini, salt, and pepper; simmer until vegetables are tender.
  6. Just before serving, drizzle lime juice over the top and garnish with chopped cilantro.
