- 2 lbs beef chuck roast, cut into 1-inch pieces
- 2 large carrots, sliced thickly
- 3 medium Yukon Gold potatoes, diced
- 1 medium zucchini, sliced
- 2 onions, quartered
- 4 cloves garlic, minced
- 1/4 cup fresh cilantro, chopped (for garnish)
- 8 cups beef broth
- 2 tbsp lime juice
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping the vegetables and cutting the beef.
- In a large pot over medium-high heat, add oil and sear the beef until browned on all sides.
- Add onions and garlic to the pot; sauté until fragrant.
- Pour in the beef broth and enough water to cover the ingredients by about an inch. Bring to a gentle boil then reduce heat to simmer.
- After one hour, add carrots, potatoes, zucchini, salt, and pepper; simmer until vegetables are tender.
- Just before serving, drizzle lime juice over the top and garnish with chopped cilantro.
