- 4 boneless, skinless chicken thighs (1 lb)
- 1 cup long-grain rice
- 2 cups low-sodium chicken broth
- 1 medium yellow onion, finely chopped
- 3 garlic cloves, minced
- 3 tbsp Dijon mustard
- 2 tsp paprika
- 1 tsp agar-agar powder
- 2 tbsp olive oil
Instructions
- In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent, then add minced garlic and cook until fragrant.
- Push onions aside and sear chicken thighs in the skillet until golden brown on both sides. Remove from pan.
- In the same skillet, mix Dijon mustard, paprika, chicken broth, and agar-agar powder. Simmer for five minutes until thickened.
- Return chicken to the skillet and add rice with enough broth to cover by one inch.
- Cover and simmer on low for 25 minutes or until rice is cooked through and has absorbed the sauce.
- Let sit covered for five minutes before fluffing with a fork and serving.
