Ingredients

  • 4 boneless, skinless chicken thighs (1 lb)
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 3 tbsp Dijon mustard
  • 2 tsp paprika
  • 1 tsp agar-agar powder
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent, then add minced garlic and cook until fragrant.
  2. Push onions aside and sear chicken thighs in the skillet until golden brown on both sides. Remove from pan.
  3. In the same skillet, mix Dijon mustard, paprika, chicken broth, and agar-agar powder. Simmer for five minutes until thickened.
  4. Return chicken to the skillet and add rice with enough broth to cover by one inch.
  5. Cover and simmer on low for 25 minutes or until rice is cooked through and has absorbed the sauce.
  6. Let sit covered for five minutes before fluffing with a fork and serving.
