  • 1/2 cup salted butter
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 20 caramels (unwrapped)
  • 1 tbsp milk
  • 2 cups milk chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg white and vanilla extract; mix until smooth.
  4. Gradually add flour and baking powder; mix until just combined.
  5. Roll out dough on a floured surface to about 1/4 inch thick and cut into circles.
  6. Place on an ungreased baking sheet and bake for 6-8 minutes until puffy but not glossy.
  7. Cool completely on a wire rack.
  8. Microwave unwrapped caramels with milk for one minute, stirring until smooth.
  9. Spoon caramel onto each cookie cup and chill in the fridge for 10-15 minutes.
  10. Melt chocolate chips in intervals until smooth and spread over each cookie cup.
  11. Allow to set before serving.
