  • 4 large Russet Potatoes
  • 4 tablespoons Olive Oil
  • 1 cup Greek Yogurt
  • 1 cup Shredded Cheddar Cheese
  • 8 slices Turkey Bacon
  • 1 pound Chicken Sausage
  • 1 medium Onion
  • 2 cloves Garlic
  • Salt to taste
  • Pepper to taste
  • Breadcrumbs (optional)
  • Fresh Parsley (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and peel the potatoes; cut them into chunks and boil in salted water until tender (15-20 minutes). Drain and mash with olive oil, Greek yogurt, cheddar cheese, salt, and pepper.
  3. In a skillet, sauté diced onion until translucent. Add minced garlic and turkey bacon; cook until crispy. Stir in chicken sausage until browned.
  4. In a baking dish, layer half of the mashed potato mixture at the bottom, spread the filling on top, then cover with the remaining potatoes.
  5. Bake for about 35 minutes until golden brown on top.
  6. Allow to cool slightly before slicing and garnish with parsley if desired.
