Instructions

  2. Prepare corn salsa by combining sweet corn, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper in another bowl; mix gently.
  3. Preheat the grill over medium-high heat and grill shrimp for about 2–3 minutes per side until pink and opaque.
  4. To make the creamy sauce, whisk together Greek yogurt, garlic powder, lime juice, salt, and pepper until smooth.
  5. Assemble bowls: layer rice or quinoa (if using), grilled shrimp, avocado slices, and corn salsa. Drizzle with creamy sauce before serving.
