Ingredients
- 1/2 purple cabbage
- 1/2 green cabbage
- 2 medium carrots
- 1/2 cup chopped green onion
- Juice from 1 large lime
- 2 Tbsp sugar
- 2 Tbsp minced cilantro
- 1 large ripe mango
- 1 cup cashews
- 1/4 – 1/3 cup olive oil
- Pinch of cayenne pepper (to taste)
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Thinly slice the purple and green cabbages and place them in a large mixing bowl.
- Peel and grate the carrots; add them to the bowl with the cabbage.
- Peel and chop the mango into small pieces; mix into the slaw.
- Add chopped green onions, lime juice, sugar, minced cilantro, olive oil, and cayenne pepper to the bowl; gently mix everything together.
- Fold in cashews until evenly distributed.
