- 1 medium red onion (minced)

- 700 grams green peas (fresh or frozen)
- 500 grams potatoes (peeled and diced)
- 3–4 small zucchinis (sliced)
- 2 medium carrots (sliced)
- 3 teaspoons tomato paste
- 2 medium ripe tomatoes (diced)
- 2–3 tablespoons fresh dill (chopped)
- Sea salt to taste
- 400 ml hot water or vegetable stock
Instructions
- Heat olive oil in a large pot over moderate heat.
- Sauté minced onion and garlic until soft.
- Add potatoes, zucchini, peas, and carrots; cook for about 5 minutes.
- Stir in tomato paste; cook for one minute.
- Add diced tomatoes and season with salt; stir well.
- Pour in hot water or stock; bring to a simmer.
- Cover and simmer on low heat for 40-50 minutes until vegetables are tender.
- Stir in remaining olive oil and dill; adjust seasoning as needed.
