  • 35 chocolate creme cookies
  • 5 tbsp unsalted butter
  • 24 oz full-fat cream cheese
  • 8 oz mascarpone cheese
  • 1 ½ cups granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • ½ cup heavy cream
  • 1 cup sour cream
  • 1 tbsp cornstarch, sifted
  • 12 ladyfinger biscuits
  • ½ cup strong black coffee
  • 4 oz mascarpone cheese, cold
  • 24 tbsp granulated sugar
  • 1 tsp instant coffee dissolved in 1 tsp water
  • 1 cup heavy whipping cream, chilled
  • 2 tbsp cocoa powder, to dust

Instructions

  1. Preheat oven to 350°F (175°C). Butter the base of a 10-inch springform pan.
  2. Crush chocolate cookies and mix with melted butter. Press into the bottom of the pan and bake for 7–8 minutes.
  3. In a stand mixer, blend cream cheese, mascarpone, sugar, vanilla, and salt until smooth. Add eggs gradually.
  4. Mix in heavy cream, sour cream, and sifted cornstarch until just combined.
  5. Pour half the batter over the cooled crust; layer with coffee-dipped ladyfingers; pour remaining batter on top.
  6. Create a water bath by placing the springform pan in a larger tray filled with boiling water and bake for about 80 minutes.
  7. Cool at room temperature before refrigerating overnight.
  8. Prepare topping by whisking cold mascarpone, sugar, dissolved coffee, and chilled whipping cream until stiff peaks form. Spread over cheesecake and dust with cocoa.
