  • 6 potatoes (cubed)
  • 24 oz mushrooms (sliced)
  • 1 carrot (grated)
  • 1 onion (diced)
  • 8 oz cream cheese
  • 1/4 cup sour cream
  • 1 cup heavy cream
  • 1 tbsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Mrs. Dash
  • 1 tbsp chicken bouillon powder
  • 1 mushroom bouillon cube
  • 3 tbsp fresh dill

Instructions

  1. In a large pot, bring 12 cups of water to boil. Add cubed potatoes and both types of bouillon. Simmer for about 25 minutes until tender; season halfway through.
  2. Meanwhile, heat oil in a skillet over medium heat. Sauté sliced mushrooms, diced onions, and grated carrots for about 10 minutes until tender.
  3. Stir in cream cheese and sour cream until melted and well combined; transfer to the pot with simmering potatoes.
  4. Add heavy cream to the pot and stir until well mixed. Turn off the heat and garnish with fresh dill before serving.
