  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 medium sweet potato, scrubbed and chopped
  • 2 tablespoons red curry paste
  • 1 can (14 ounces) unsweetened coconut milk
  • 4 cups vegetable stock
  • 1 package (13 ounces) potstickers (vegetarian or meat-filled)
  • 2 heaping cups fresh spinach
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large stockpot over medium-high heat. Sauté garlic, onion, red bell pepper, and sweet potato for 3–4 minutes until softened.
  2. Stir in red curry paste and cook for an additional minute. Add coconut milk and vegetable stock; whisk until smooth.
  3. Bring to a boil, then add potstickers. Reduce heat to simmer for 6–8 minutes until thickened.
  4. Stir in spinach and lime juice; cook for another 1–2 minutes until spinach wilts.
  5. Serve hot, garnished with chopped cilantro.
