  • 1/4 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp Thai red curry paste
  • 1 small yellow onion, diced
  • Coconut milk (for sauce)
  • Fresh herbs (cilantro and green onions)

Instructions

  1. In a mixing bowl, combine ground chicken, panko breadcrumbs, egg, minced garlic, fish sauce, soy sauce, red curry paste, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small meatballs about 1 inch in diameter.
  3. Heat oil in a skillet over medium heat. Cook meatballs until browned on all sides (approximately 8-10 minutes). Remove and set aside.
  4. In the same skillet, add more oil and sauté diced onion until translucent. Stir in red curry paste and remaining garlic; cook until fragrant.
  5. Add meatballs back into the skillet with coconut milk, simmering for about 5-7 minutes until heated through.
