  • 1 pound boneless skinless chicken breasts
  • ½ cup soy sauce
  • ¼ cup light brown sugar
  • 1 cup diced fresh pineapple

Instructions

  1. Rinse sushi rice until the water runs clear. Cook rice in a medium pot with water on low heat for about 18 minutes. Let sit covered for another 10 minutes. Stir in vinegar, sugar, and salt.
  2. Whisk together soy sauce, water, light brown sugar, rice vinegar, garlic, ginger, sesame oil, and cornstarch in a bowl. Heat in a skillet until thickened.
  3. In a skillet with olive oil over medium-high heat, cook seasoned chicken breasts for about 6-7 minutes per side until golden brown. Slice into strips.
  4. Assemble bowls with sushi rice as the base followed by teriyaki chicken and your choice of toppings.
