  • 1 recipe Teriyaki sauce (or 1/2 cup store-bought)
  • 1 head Broccoli (chopped into florets; ~3 cups)
  • 2 tbsp Olive oil
  • 24 oz Boneless skinless chicken breasts (cut into bite-sized pieces)
  • 2 tsp Sesame seeds
  • 1 medium Green onion (sliced)
  • 2 medium Carrots (shredded; ~1 cup)
  • 2 cups Cooked rice

Instructions

  1. Prepare the teriyaki sauce as directed.
  2. Steam broccoli by filling a saucepan with an inch of water, bringing it to a boil, then adding broccoli in a steamer basket for about 5-6 minutes until tender.
  3. Heat olive oil in a skillet over medium heat. Add chicken pieces in batches and cook for about 3-4 minutes per side until browned and fully cooked.
  4. Pour teriyaki sauce over the cooked chicken and toss until well-coated. If desired, simmer for additional thickness.
  5. Garnish with sesame seeds and green onions.
  6. To assemble bowls, place cooked rice at the bottom, add steamed broccoli and shredded carrots, then top with teriyaki chicken.
