  • 2 medium sweet potatoes, peeled and diced
  • 2 cans black beans, drained and rinsed
  • 1 can diced tomatoes (fire-roasted recommended)
  • 1 large onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • Salt and pepper, to taste
  • Optional: vegetable broth, Greek yogurt or sour cream for topping

Instructions

  1. Prepare all ingredients: Dice sweet potatoes and chop onions and bell peppers. Mince garlic and rinse black beans.
  2. (Optional) Sauté onions in olive oil until translucent; add garlic and bell peppers for another few minutes. Stir in spices until fragrant.
  3. Transfer sautéed vegetables to the crock pot along with sweet potatoes, black beans, tomatoes, and any remaining spices.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  5. Adjust seasoning before serving to taste.
