  • 1/2 cup sweet chili sauce
  • 1 lime (juiced)
  • 4 chicken breasts (~2lbs)
  • 8 cups cauliflower rice (fresh or frozen)
  • 1/4 cup fresh cilantro (chopped)

Instructions

  1. Marinate the chicken by mixing 1/2 cup coconut milk, sweet chili sauce, and lime juice in a large Ziplock bag. Add salt and pepper, then coat the chicken and refrigerate for 30 minutes to 1 hour.
  2. Preheat your grill to medium-high heat.
  3. Grill marinated chicken breasts for 4-5 minutes on one side; flip and grill for another 3-4 minutes until cooked through (internal temperature should reach 165°F). Let rest for 5 minutes before serving.
  4. In a skillet over medium heat, melt coconut oil and sauté cauliflower rice seasoned with salt and pepper until tender (about 5-7 minutes). Stir in remaining coconut milk and chopped cilantro before serving.
