  • 2 tbsp vegetable oil
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup low-sodium soy sauce
  • 1/3 cup sugar
  • 2 tbsp pineapple juice
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium red bell pepper (diced)
  • 1 medium green bell pepper (diced)
  • 1/2 medium onion (sliced, optional)

Instructions

  1. Season chicken with salt and pepper, then coat lightly with cornstarch.
  2. Heat oil in a large skillet over medium-high heat. Cook the chicken until golden brown, about 5-7 minutes.
  3. In a bowl, whisk together ketchup, rice vinegar, soy sauce, sugar, pineapple juice, and cornstarch mixed with water.
  4. Remove chicken from skillet; add diced bell peppers, onion (if using), and pineapple chunks. Stir-fry for 3-5 minutes.
  5. Return chicken to the pan and pour the sauce over it. Stir well and cook until the sauce thickens, about 3-5 minutes.
  6. Serve hot over rice or noodles.
