  • 4 strips turkey bacon
  • 1/2 large yellow onion
  • 2 ribs celery
  • 5 ears corn
  • 4 cloves garlic
  • 2 russet potatoes
  • 1 large zucchini
  • 1 large yellow squash
  • 5 cups chicken broth (low sodium)
  • 2 cups half and half

Instructions

  1. Cook turkey bacon in a large Dutch oven over medium heat until crisp (about 5 minutes).
  2. Sauté onion and celery for 3 minutes; add corn and cook for another 4 minutes.
  3. Stir in garlic; then add chicken broth, potatoes, and seasonings. Simmer for 10 minutes.
  4. Add zucchini and yellow squash; cook until veggies are tender (10-12 minutes).
  5. Puree part of the chowder in a food processor until smooth; return to pot.
  6. Stir in half and half; remove from heat.
  7. Let sit for 10 minutes before serving warm.
