  • 1/2 cup sugar (for crust)
  • 3/4 cup melted butter
  • 8 ounces softened cream cheese
  • 1 cup sugar (for cheesecake layer)
  • 8 ounces thawed whipped cream topping
  • 6 ounces strawberry-flavored Vegan Gelatin
  • 2 cups boiling water

Instructions

  1. Preheat oven to 350°F. Spray a 9 x 13 inch baking pan with cooking spray.
  2. Blend crushed pretzels, melted butter, and sugar in a bowl; press into the pan. Bake for 10 minutes and let cool.
  3. Beat cream cheese and sugar in a bowl until smooth. Fold in whipped topping and chill for 15 minutes.
  4. Spread chilled cheesecake mixture over cooled crust.
  5. Dissolve gelatin in boiling water, stir in strawberries, then pour over cheesecake layer. Chill for at least 4 hours before serving.
