  • ½ cup light brown sugar
  • ½ cup unsalted butter
  • 2 tablespoons granulated sugar (or honey)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon (optional, but recommended)
  • ¼ cup honey or maple syrup (optional, for added sweetness)

Instructions

  1. Prepare the strawberry filling by cooking chopped strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla extract in a saucepan until thickened.
  2. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  3. Combine oats, flour, brown sugar, baking powder, salt, and cinnamon in a bowl. Mix in cold butter until crumbly.
  4. Press 2/3 of the crumble into the pan for the base. Spread cooled strawberry filling on top and sprinkle with remaining crumble.
  5. Bake for 35–40 minutes until golden brown. Allow cooling before slicing.
