- 2 cups fresh or frozen strawberries
- 1 ½ cups old-fashioned rolled oats
- 1 cup all-purpose flour
- ½ cup light brown sugar
- ½ cup unsalted butter
- 2 tablespoons granulated sugar (or honey)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- ½ teaspoon vanilla extract
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon (optional, but recommended)
- ¼ cup honey or maple syrup (optional, for added sweetness)
Instructions
- Prepare the strawberry filling by cooking chopped strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla extract in a saucepan until thickened.
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Combine oats, flour, brown sugar, baking powder, salt, and cinnamon in a bowl. Mix in cold butter until crumbly.
- Press 2/3 of the crumble into the pan for the base. Spread cooled strawberry filling on top and sprinkle with remaining crumble.
- Bake for 35–40 minutes until golden brown. Allow cooling before slicing.
