Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine melted coconut oil and cane sugar until smooth. Add the egg and whisk until blended.
- In another bowl, mix all-purpose flour, oat flour, cinnamon, and salt. Gradually add this dry mixture into the wet ingredients until just combined.
- Toss diced strawberries with cane sugar and lemon juice in a separate bowl and let sit for 10 minutes.
- Spread half of the base mixture in a prepared baking dish, layer with strawberry filling, and top with remaining base mixture.
- Bake for about 45 minutes or until golden brown. Allow cooling before slicing.
