  • ¼ cup cane sugar
  • 1 large egg
  • ½ cup all-purpose flour
  • ½ cup oat flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 pound strawberries (small diced)
  • 2 tablespoons cane sugar
  • 1 tablespoon lemon juice
  • ¼ cup oat flour
  • ¼ cup all-purpose flour
  • ¼ cup coconut oil (melted)
  • ¼ cup cane sugar
  • ¼ teaspoon salt
  • 1 ½ cup rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine melted coconut oil and cane sugar until smooth. Add the egg and whisk until blended.
  3. In another bowl, mix all-purpose flour, oat flour, cinnamon, and salt. Gradually add this dry mixture into the wet ingredients until just combined.
  4. Toss diced strawberries with cane sugar and lemon juice in a separate bowl and let sit for 10 minutes.
  5. Spread half of the base mixture in a prepared baking dish, layer with strawberry filling, and top with remaining base mixture.
  6. Bake for about 45 minutes or until golden brown. Allow cooling before slicing.
