- 4 oz unsalted butter (softened)
- 4 cups powdered sugar (sifted)
- Zest of 1 lemon
- 1 oz freeze dried strawberries
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In one bowl, mix flour, baking powder, baking soda, and salt. In another bowl, whisk together eggs, sugar, vanilla extract, oil, lemon juice, and milk.
- Gradually add dry ingredients to wet ingredients until just combined.
- Fill cupcake liners two-thirds full and bake for about 15 minutes. Cool completely on a wire rack.
- For the frosting, beat cream cheese and butter until smooth; gradually add powdered sugar and mix in vanilla extract and zest.
- Frost cooled cupcakes with either strawberry or lemon cream cheese frosting.
