  • 1/2 cup rolled oats
  • 1/2 cup shredded coconut (unsweetened)
  • 3 tbsp maple syrup
  • 2 tbsp coconut oil (room temperature)
  • 1 cup fresh strawberries (finely diced)
  • 454 g silken tofu (drained)
  • 1/3 cup maple syrup
  • 1/4 cup raw cacao powder
  • 3 tbsp corn starch
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8×8 baking sheet with parchment paper.
  2. For the crust, mix almond flour, rolled oats, shredded coconut, maple syrup, and coconut oil in a bowl until well combined. Press into the bottom of the prepared baking sheet.
  3. For the filling, blend finely diced strawberries with silken tofu until smooth. Add maple syrup, raw cacao powder, corn starch, and vanilla extract; blend until creamy.
  4. Pour the filling over the crust and spread evenly. Bake for about 32 minutes until firm.
  5. Allow cooling completely before slicing into squares; serve with desired toppings.
