- 1 cup almond flour
- 1/2 cup rolled oats
- 1/2 cup shredded coconut (unsweetened)
- 3 tbsp maple syrup
- 2 tbsp coconut oil (room temperature)
- 1 cup fresh strawberries (finely diced)
- 454 g silken tofu (drained)
- 1/3 cup maple syrup
- 1/4 cup raw cacao powder
- 3 tbsp corn starch
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line an 8×8 baking sheet with parchment paper.
- For the crust, mix almond flour, rolled oats, shredded coconut, maple syrup, and coconut oil in a bowl until well combined. Press into the bottom of the prepared baking sheet.
- For the filling, blend finely diced strawberries with silken tofu until smooth. Add maple syrup, raw cacao powder, corn starch, and vanilla extract; blend until creamy.
- Pour the filling over the crust and spread evenly. Bake for about 32 minutes until firm.
- Allow cooling completely before slicing into squares; serve with desired toppings.
