  • 1 lb flank or sirloin steak
  • 1 cup uncooked long-grain white rice
  • 1 ½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 2 teaspoons ground cumin
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 2 cloves garlic, finely chopped
  • 1 teaspoon chili powder
  • Fresh cilantro for garnish
  • Thin slices of jalapeños for garnish
  • Lime wedges for garnish
  • Creamy avocado slices for garnish

Instructions

  1. Rinse the rice under cold water; toast with garlic powder in olive oil for a few minutes before adding broth. Cover and simmer for 18–20 minutes until tender.
  2. Season the steak with olive oil and spices; cook in a hot skillet for 4–5 minutes per side until desired doneness. Let rest before slicing.
  3. In the same skillet, melt butter and sauté garlic; stir in milk and gradually add cheeses until melted into a smooth sauce. Season to taste.
  4. Serve by layering cooked rice on plates topped with sliced steak and cheese sauce; garnish with cilantro, jalapeños, avocado slices, and lime juice.
