Ingredients

Scale
  • 8 mini or Persian cucumbers
  • 1 green onion
  • 1 ½ tbsp low-sodium soy sauce
  • 1 ½ tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • 2 large garlic cloves (minced)
  • 1 tsp red chili flakes
  • Sesame seeds (for garnish)

Instructions

  1. Wash and dry the cucumbers, then cut off both ends. Slice cucumbers diagonally into spirals using chopsticks for support.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), minced garlic, and chili flakes until well combined.
  3. Transfer the spiraled cucumbers to a mixing bowl and pour the dressing over them. Gently toss to coat without breaking the spirals.
  4. Garnish with sliced green onions and sesame seeds before serving.
