  • 1/2 cup buttermilk
  • 1 large egg, beaten

  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon hot sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon Creole seasoning
  • 1 teaspoon chopped fresh parsley
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large bowl, mix cornmeal, flour, baking powder, salt, black pepper, cayenne pepper, and smoked paprika.
  2. In another bowl, whisk together buttermilk, beaten egg, green onions, and parsley.
  3. Combine the wet and dry mixtures gently; fold in crawfish tails until evenly distributed.
  4. Heat oil in a deep fryer or skillet to 350°F (175°C).
  5. Drop spoonfuls of batter into hot oil; fry for 2-3 minutes until golden brown.
  6. Drain on paper towels and serve warm with Creole dipping sauce.
