  • 2 egg yolks
  • 2 eggs
  • 4 oz Parmesan cheese
  • 12 oz turkey bacon
  • 3 cloves garlic
  • Kosher salt

Instructions

  1. Preheat oven to 400°F. Slice spaghetti squash in half and remove seeds. Place cut side down on a baking sheet and roast until fork-tender (30-45 minutes).
  2. Shred the cooked squash into strands using a fork.
  3. In a bowl, whisk together egg yolks, eggs, and Parmesan cheese.
  4. In a skillet over medium heat, cook turkey bacon until crispy; add minced garlic and sauté briefly.
  5. Toss shredded squash into the skillet with bacon; season with salt.
  6. Remove from heat and mix in the egg mixture until well combined.
  7. Serve warm, garnished with parsley and additional Parmesan if desired.
