- 3/4 cup Ranch Dressing
- 1 cup Grape Tomatoes (quartered)
- 15 ounces Black Beans (drained, rinsed)
- 15 ounces Corn (drained)
- 2 tbsp Lime Juice (fresh)
Instructions
- Season sliced chicken breasts with seasoning salt.
- In a medium pan, heat olive oil over medium heat. Cook chicken until golden and fully cooked through; set aside to cool.
- In a bowl, whisk together ranch dressing, lime juice, sugar, and taco seasoning until smooth.
- Drain and rinse black beans and corn; pat dry. Quarter grape tomatoes.
- In a large mixing bowl, combine coleslaw mix, cooled chicken, shredded cheese, tomatoes, black beans, and corn.
- Pour the dressing over the salad mixture and toss gently with tongs until evenly coated.
