  • 2 pounds Chicken Breast (sliced and cubed)
  • 4 cups Coleslaw Mix
  • 3/4 cup Ranch Dressing
  • 1 cup Grape Tomatoes (quartered)
  • 15 ounces Black Beans (drained, rinsed)
  • 15 ounces Corn (drained)
  • 2 tbsp Lime Juice (fresh)

Instructions

  1. Season sliced chicken breasts with seasoning salt.
  2. In a medium pan, heat olive oil over medium heat. Cook chicken until golden and fully cooked through; set aside to cool.
  3. In a bowl, whisk together ranch dressing, lime juice, sugar, and taco seasoning until smooth.
  4. Drain and rinse black beans and corn; pat dry. Quarter grape tomatoes.
  5. In a large mixing bowl, combine coleslaw mix, cooled chicken, shredded cheese, tomatoes, black beans, and corn.
  6. Pour the dressing over the salad mixture and toss gently with tongs until evenly coated.
  7. Cover and refrigerate for at least one hour before serving.
