Ingredients

  • 1 lb ground chicken
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1/3 cup red bell pepper (finely diced)
  • 2 tablespoons green onion (diced)
  • 2 teaspoons smoked paprika
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon avocado oil
  • 4 slices cheddar cheese
  • 2 strips turkey bacon (cooked)
  • 2 toasted buns
  • mayo
  • sriracha
  • red onion (sliced)

Instructions

  1. In a mixing bowl, combine ground chicken, egg, breadcrumbs, red bell pepper, green onion, smoked paprika, Cajun seasoning, salt, pepper, and garlic. Mix until well combined.
  2. Divide the mixture into four equal portions and shape into balls.
  3. Heat avocado oil in a skillet over medium heat. Place the meatballs in the skillet and smash down gently with a spatula to form patties.
  4. Cook for about 4–5 minutes before flipping. Add cheese slices on top after flipping and cover until melted (3–4 minutes).
  5. Assemble by spreading mayo and sriracha on toasted buns, topping with patties, turkey bacon, and red onion.
