  • 1 large bone-in lamb shoulder (about 5 lbs)
  • 6 cloves garlic, halved
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon coarse sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil (for caramelizing onions)
  • 2 large onions, thinly sliced
  • Honey herb glaze (to taste)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Pat dry the lamb shoulder and season generously with salt and pepper.
  3. Rub the chopped herbs over the meat and place halved garlic in a roasting pan.
  4. Set the lamb on top of the garlic and cover with foil.
  5. Roast for approximately 4 hours until tender; remove foil during the last hour to brown.
  6. Meanwhile, sauté sliced onions in olive oil until caramelized (about 30 minutes).
  7. Let the lamb rest for 15 minutes before carving; serve with onions and honey herb glaze.
