  • 1 small yellow onion, thinly sliced
  • 2 ½3 lb. boneless beef shoulder
  • 3 garlic cloves, minced
  • 1 ½ cups BBQ sauce
  • ¼ cup apple cider vinegar
  • 6 cups cooked rice
  • 1 (10-12 ounce) bag coleslaw mix
  • 3 tablespoons fresh lime juice
  • 2 tablespoons avocado oil or olive oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons honey
  • ½ teaspoon ground cumin
  • ¼½ teaspoon fine salt, or to taste
  • Pinch of chipotle powder or cayenne pepper, optional
  • Pickles or jalapeños for serving

Instructions

  1. Place sliced onion in the bottom of the slow cooker.
  2. Add the beef shoulder on top of the onions.
  3. Sprinkle minced garlic over the beef and pour BBQ sauce and apple cider vinegar around it.
  4. Cover and cook on LOW for 8-10 hours until the beef is tender.
  5. Shred beef in the slow cooker with two forks; mix with juices.
  6. For slaw, combine coleslaw mix with lime juice and other dressing ingredients; refrigerate until serving.
  7. Assemble bowls with rice, shredded beef, slaw, and optional toppings.
