Ingredients
- 2 pounds lean ground beef
- 2 eggs
- 1 cup crushed saltine crackers
- 1/3 cup dry minced onion
- 1/3 cup milk
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ginger powder
- 1/4 tsp pepper
- 1 cup seedless blackberry preserves
- 1/2 cup hoisin sauce
- 3 tablespoons Gochujang
- 1/4 cup red apple vinegar
- 2 tablespoons low sodium soy sauce
Instructions
- Preheat your oven to 450°F and line a baking sheet with foil.
- In a mixing bowl, whisk the eggs and then add the remaining meatball ingredients. Mix well.
- Roll the mixture into meatballs of desired size (about 60) and place them on the baking sheet. Bake for approximately 8 minutes until lightly browned.
- While baking, combine all sauce ingredients in another bowl and whisk until smooth.
- Layer half of the baked meatballs in the slow cooker and top with a layer of sauce; repeat with remaining meatballs and sauce.
- Cover and cook on low for about 2 hours, stirring gently after one hour.
