Ingredients
- 2 lbs beef chuck, cut into 1.5-inch cubes
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup beef broth
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 3 tbsp red curry paste
- 1 tbsp curry powder
- 2 tbsp lime juice
- Fresh cilantro for garnish
Instructions
- Sear the beef in a skillet until browned on all sides.
- In a mixing bowl, combine coconut milk, broth, red curry paste, spices, brown sugar, fish sauce or soy sauce, lime juice, salt, and pepper.
- Place seared beef in the slow cooker; pour the sauce over it and add onions, garlic, and ginger.
- Cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
- Serve hot over rice with garlic naan and garnish with cilantro.
