Ingredients

  • 1 large sweet potato
  • 1 lb ground beef
  • Ghee or olive oil
  • Garlic and onions
  • Bell pepper
  • Dijon mustard and paleo ketchup
  • Coconut aminos

Instructions

  1. Preheat oven to 415°F.
  2. Slice sweet potato into 1/4 inch rounds. Toss with olive oil and salt, then roast on a baking sheet for 10-12 minutes until tender.
  3. In a cast iron skillet over medium-high heat, heat ghee or olive oil. Sauté minced garlic and diced onions until fragrant.
  4. Add ground beef and cook until browned. Drain excess fat.
  5. Mix in mustard, ketchup, coconut aminos, salt, pepper, tomato paste, chili powder, and apple cider vinegar. Stir well.
  6. Assemble bowls with roasted sweet potato as the base and top with the sloppy joe mixture. Garnish as desired.
