  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. Rinse shrimp under cold water and pat dry; season lightly with salt and pepper.
  2. Wash and chop asparagus; slice the red bell pepper; rinse snap peas; mince garlic and ginger.
  3. Mix soy sauce, oyster sauce (if using), cornstarch, and water in a bowl until combined.
  4. Heat a large skillet or wok over medium-high heat; add oil and swirl to coat.
  5. Sauté garlic and ginger for about 30 seconds until fragrant.
  6. Add shrimp in a single layer; cook for 2-3 minutes until pink; flip and cook another minute; remove from pan.
  7. Stir-fry asparagus and red bell pepper for about 2-3 minutes until softened.
  8. Add snap peas; stir-fry for an additional 2 minutes until tender-crisp.
  9. Return shrimp to the pan; pour sauce over everything; stir to coat evenly.
  10. Cook for another minute or two until the sauce thickens slightly.
