- 2 tablespoons salted butter
- ½ cup chopped onion
- 5 cloves garlic (minced)
- 1 teaspoon chili powder
- ¼ teaspoon salt (to taste)
- 1 teaspoon smoked paprika
- 2 small limes
- Fresh cilantro
Instructions
- Prepare shrimp by peeling and deveining if necessary. Mince garlic and chop onion.
- Heat olive oil in a skillet over medium heat. Season shrimp with chili powder and salt; cook for 3-4 minutes until pink. Remove shrimp from skillet.
- In the same skillet, melt butter; sauté onion until translucent (about 3 minutes). Add garlic and cook for an additional minute.
- Stir in cooked corn and smoked paprika; pour in half-and-half. Crumble half of the feta cheese into the mixture and stir until melted.
- Return shrimp to skillet; mix gently until heated through and finish with lime juice.
