  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 1 medium cucumber, grated
  • 2 garlic cloves, minced
  • 3 tbsp freshly squeezed lemon juice
  • 2 tsp dried oregano
  • 4 pita bread pockets
  • 4 oz crumbled feta cheese
  • 2 tbsp extra virgin olive oil

Instructions

  1. Marinate the chicken by mixing olive oil, lemon juice, oregano, garlic, salt, and pepper in a bowl. Add chicken and let it soak for at least 30 minutes.
  2. Prepare tzatziki by combining Greek yogurt, grated cucumber (squeeze out excess water), feta cheese, minced garlic, lemon juice, and olive oil in another bowl. Mix well and set aside.
  3. Preheat grill or stovetop pan over medium heat. Cook marinated chicken for about 6-7 minutes on each side until golden brown and cooked through (internal temperature reaches 165°F).
  4. Allow chicken to rest for a few minutes before slicing into strips.
  5. Warm pita bread and fill with sliced chicken, fresh veggies like lettuce and tomatoes, and generous amounts of tzatziki sauce.
