  • 2 tbsp taco seasoning
  • 2 tbsp olive oil
  • ½ cup sour cream
  • ¼ cup chopped cilantro
  • 1 avocado, sliced

Instructions

  1. Prepare ingredients by washing and peeling the potatoes; dice them into small cubes. Chop the onion and bell peppers; mince the garlic.
  2. In a large skillet over medium heat, heat olive oil and add the diced potatoes. Cook until golden brown and tender, about 10-15 minutes.
  3. Push potatoes to one side of the skillet or remove them temporarily. Add ground beef, breaking it up with a spatula; cook until browned, about 5 minutes.
  4. Stir in onions, bell peppers, and minced garlic; cook until vegetables soften, about 3 minutes. Add taco seasoning and mix well.
