Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 cup bell peppers (mixed colors), chopped
  • 3 cups cooked rice (white, brown, or jasmine)

  • 1 tbsp fresh ginger, grated
  • 1 tbsp honey or maple syrup

Instructions

  1. Preheat a skillet over medium heat and add oil.
  2. Season chicken breasts with salt and pepper. Cook in the skillet until golden brown on both sides (about 5-7 minutes per side). Remove and set aside.
  3. In the same skillet, sauté chopped bell peppers and minced garlic for about 3-4 minutes until tender.
  4. Whisk together soy sauce, grated ginger, and honey in a bowl. Pour into the skillet with veggies and simmer for 1-2 minutes.
  5. Return chicken to the skillet, mixing until well-coated and heated through.
