  • 4 oz crumbled gorgonzola cheese
  • 4 cups fresh spinach
  • 2 ears of fresh corn on the cob

  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Season the steak generously with salt and pepper. Let it sit at room temperature for 20 minutes.
  2. Preheat the grill to medium-high heat. Grill the steak for about 4-6 minutes per side until it reaches your desired doneness (medium-rare at 135°F). Let it rest before slicing.
  3. Grill corn for about 10-15 minutes, turning occasionally until charred. Once cool, cut kernels off the cob.
  4. In a bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper.
  5. In a large bowl or platter, layer spinach as a base. Top with sliced steak, gorgonzola, and grilled corn kernels.
