Instructions

  2. Form the mixture into small meatballs (about 1 inch in diameter).
  3. Heat olive oil in a large pot over medium heat and brown meatballs for about 5 minutes on each side.
  4. Remove meatballs and sauté chopped onion in the same pot until translucent (about 3-4 minutes).
  5. Add chicken broth and bring to a boil; reduce heat to simmer.
  6. Return meatballs to the pot and let them simmer for about 15 minutes.
  7. Stir in heavy cream and fresh spinach; cook until spinach wilts (about 2 minutes).
