Ingredients
- 3 heads garlic
- 1 tablespoon oil
- 1 onion, diced
- 3 cloves garlic, chopped
- 4 cups chicken or vegetable broth
- 3 cans (410 g each) white beans, rinsed and drained
- 2 teaspoons fresh rosemary, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Preheat oven to 180°C. Drizzle oil on exposed tops of garlic heads, wrap in aluminum foil, and roast for 60 to 90 minutes until golden brown.
- In a large saucepan over medium heat, add oil and sauté diced onion until softened (5 to 7 minutes). Add chopped garlic and cook until fragrant (about 1 minute).
- Pour in broth, white beans, and rosemary; bring to a boil then simmer for about 5 minutes.
- Squeeze roasted garlic cloves into the soup mixture.
- Blend the soup using an immersion blender until smooth.
- Stir in lemon juice and season with salt and pepper before serving.
