  • 4 large ripe tomatoes
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley for garnish

Instructions

  2. Slice the tops off the tomatoes and scoop out the insides, reserving the pulp.
  3. In a mixing bowl, combine rice, diced onion, minced garlic, oregano, salt, pepper, and reserved tomato pulp.
  4. Drizzle olive oil inside each tomato and fill them generously with the rice mixture.
  5. Place stuffed tomatoes in a baking dish and bake for 25-30 minutes until tender.
