Ingredients
- 8–9 medium starchy potatoes (about 1.2kg), thinly sliced
- 1 head garlic
- 1 cup heavy cream
- 1/4 cup whole milk
- 1 tablespoon unsalted butter
- 1 teaspoon fresh thyme leaves
- 1/4 teaspoon nutmeg
- 1/2 cup grated parmesan cheese
- 2 cups shredded Gruyère or mozzarella cheese
- Salt and pepper to taste
Instructions
- 1. Preheat oven to 375°F (190°C).
- 2. Roast the garlic: Cut off the top of the head, drizzle with olive oil, wrap in foil, and roast for 30 minutes.
- 3. Grease a 9×13-inch baking dish with butter.
- 4. Slice potatoes thinly using a mandoline slicer.
- 5. Layer potato slices upright in the baking dish.
- 6. In a saucepan, combine cream, milk, butter, half parmesan cheese, thyme, nutmeg, salt, and pepper; heat until combined.
- 7. Squeeze roasted garlic into a bowl and mash; stir into cream mixture.
- 8. Pour over layered potatoes and cover with foil; bake for 40 minutes.
- 9. Remove foil; top with remaining cheeses and bake uncovered for an additional 30 minutes until golden brown.
